Ingredients:
-3/4 cup almond meal/flour
-1/4 cup coconut flour
-3/4 tsp baking soda
-1/4 tsp sea salt
-1 tbsp cinnamon
-3 eggs
-2 tbsp coconut oil, melted
-1/ 2 cup grated apple
-1/4 cup unsweetened applesauce
-4 tbsp honey
-1 tsp vanilla
-1/4 cup chopped walnuts (optional)
-1/4 cup raisins (optional)
Directions:
-Preheat your oven to 350 degrees F. Prepare your loaf pan with butter or extra virgin coconut oil. Alternately, you can line with parchment paper instead of oil/butter.
-In a large mixing bowl, mix dry ingredients. Use a fork to combine and get rid of all of the lumps.
-In a seperate bowl, combine wet ingredients. Mix until well incorporated.
-Combine the wet and dry ingredients. Stir in your raisins and walnuts, if using.
-Transfer batter to prepared loaf pan and bake for 35-40 minutes or until a toothpick inserted comes out clean and the edges have started to pull away from the pan.
-Let cool and enjoy!
