Crockpot Apple Butter


Ingredients:
-2 pounds of apples, any sort you like, I used Gala
-juice of 1/2 of a lemon
-2 tsp vanilla extract
-1 tsp cinnamon

Directions:
-Wash, core, and cut your apples into eigths. You can peel them if you like but I like to leave the skin on. Place all of the apples in the slow cooker.
-Add in lemon juice and toss to coat.
-Put the lid on the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.
-At this point you can use an immersion blender and blend it up right in the crock pot, which is what I do. Alternately, you can remove the cooked apples to the food processor and blend it up that way. Whichever way you choose, blend it up until it's smooth and creamy.
-Return the pureed apples to the crock pot. Add your vanilla and cinnamon and cook, uncovered, over low for an additional 30 minutes. Let cool and enjoy!
