Grain Free Coconut Chocolate Chip Muffins

Ingredients:
-1/2 cup coconut flour
-1/4 cup almond flour
-1/2 cup unsweetened shredded coconut
-1/2 cup coconut palm sugar
-1/2 cup chocolate chips
-1/2 tsp baking soda
-3 eggs
-3/4 cup full fat canned coconut milk
-1 1/2 tsp vanilla extract
-1/2 tsp Bragg's apple cider vinegar

Directions:
-Preheat your oven to 350 degrees F. Prepare your muffin tin with extra virgin coconut oil.
-Combine dry ingredients in a large mixing bowl, and mix well with a fork until there are no lumps.
-Combine eggs, vanilla, coconut milk and apple cider vinegar. Whisk well.
-Combine the wet with the dry until well incorporated. Stir in chocolate chips
-Divide into muffin tin and bake for 25-30 minutes or until a toothpick inserted comes out clean.

Yields 8-12 muffins.
