Grain Free Drop Bicuits

Ingredients:
-2 1/2 cups almond flour/meal
-1/2 tsp sea salt
-1/2 tsp baking soda
-1/4 cup extra virgin coconut oil
-1/4 cup raw honey, slightly melted on stovetop, just until liquid
-2 eggs
-1 tsp lemon juice (or apple cider vinegar)


Directions:
-Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.
-Mix almond flour, salt and baking soda in a large bowl.
-In a seperate bowl, whisk together oil, honey, eggs, and lemon juice.
-Combine the wet ingredients with the dry ingredients until well incorporated.
-Drop biscuits onto prepared baking sheet, about 1/4 cup each. Bake for 15-20 minutes until golden brown and toothpick inserted comes out clean.

Yields 10-12 biscuits. Recommended to serve with my Southern Style Braised Chicken Thighs.
